Ingredients
- 4 large4 large eggs
- 2 cup475 ml baby spinach
- 1 cup235 ml mushrooms
- 1/4 cup60 ml onion
- 1 tbsp15 ml olive oil
- 2 tbsp30 ml low-sodium feta cheese
- 1/4 tsp1 ml black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and mushrooms in olive oil over medium heat for 4 minutes.
- Add spinach and cook until wilted.
- Whisk eggs with pepper and pour over vegetables in an oven-safe pan.
- Crumble feta on top.
- Bake 15–18 minutes until set. Slice and serve.
