- 1 1/2 cup355 ml diced tomatoes
- 1 medium1 medium bell pepper
- 1/2 medium1/2 medium onion
- 2 clove2 clove garlic
- 1 tbsp15 ml olive oil
- 1/2 tsp2 ml cumin
- 1/2 tsp2 ml smoked paprika
- 1 tbsp15 ml fresh parsley
Instructions
- Heat olive oil in a large skillet and sauté onion and bell pepper until soft, 5 minutes.
- Add garlic, cumin, and smoked paprika, and cook 1 minute until fragrant.
- Pour in diced tomatoes and simmer 8–10 minutes until slightly thickened.
- Make 4 wells in the sauce and crack in the eggs.
- Cover and cook 6–8 minutes until whites are set but yolks are still soft.
- Finish with fresh parsley and serve straight from the pan.
