Instructions
- Sauté mushrooms in olive oil until golden; set aside.
- Sauté onion and garlic in the same pan.
- Add rice and toast 1 minute; deglaze with white wine.
- Add warm broth one ladle at a time, stirring until absorbed, about 25 minutes.
- Stir in mushrooms, parmesan, and butter before serving.
