Instructions
- Cook brown rice according to package directions.
- Sauté onion, garlic, and ginger in olive oil.
- Stir in garam masala, then diced tomatoes and coconut milk; simmer 5 minutes.
- Add chickpeas and simmer 15 minutes.
- Serve over rice.
