Instructions
- Brown the chicken in olive oil, then set aside.
- Sauté the onion with cinnamon and cumin until fragrant.
- Return the chicken to the pot with tomato, chickpeas, and apricots.
- Simmer covered for 25–30 minutes until the chicken is tender.
